EXPLORE Explore the tradition of Wagashi
As a craftsman is required to make a wide variety of Wagashi, such as those to be sold year round, special seasonal Wagashi, those related to Japanese customs or occasions, and also a basic “An-sweeten bean paste”, more than ten years of training is necessary to become an all-around craftsman.
Generally, because Wagashi shops are obliged to make small amounts and many varieties of Wagashi, a craftsman’s workload varies greatly. Therefore, they decide the priority of which to make first and work hard from early in the morning.
Here, we will show you the daily life of Mr. Takeshi Inoue, a certified “excellent Wagashi craftsman”.
