Daily life of a craftsman

As a craftsman is required to make a wide variety of Wagashi, such as those to be sold year round, special seasonal Wagashi, those related to Japanese customs or occasions, and also a basic “An-sweeten bean paste”, more than ten years of training is necessary to become an all-around craftsman.
Generally, because Wagashi shops are obliged to make small amounts and many varieties of Wagashi, a craftsman’s workload varies greatly. Therefore, they decide the priority of which to make first and work hard from early in the morning.
